Draymen’s cellar star status

A dozen Adnams draymen gave up a Saturday to take the British Institute of Innkeeping (BII) cellar management qualification, so they can advise customers on how to store, handle and dispense the beer they deliver.
Cask Marque’s current focus has been on the cellar and all pubs will need to gain a four or five-star rating to hold its accreditation.
Cask Marque director Paul Nunny said: “Good cellar practice delivers better yields and better beer helping pub profitability. Remember the cellar is to beer as the kitchen is to food. The star rating system will drive up standards that will not only benefit the pub but also the consumer.”
Adnams transport manager Gary Stacey said: “Our draymen are frequently asked about cellar issues. Now they can feel confident in answering questions and giving advice. It will also reduce ullage returns.”
